Ingredients

lemon juice

garlic

olive oil

vinegar

Steps to prepare
1.
Before preparing, remove all ingredients from refrigerator for at least 1 hour so that they come to room temperature.

Whisk eggs and egg yolk in a large bowl with a fine whisk. Combine both oils and stir into egg mixture, first drop by drop and then gradually.
3.
Season to taste with the garlic puree, vinegar, salt, sugar and pepper, and top off with lemon juice if desired.

Strain the mixture through iSi Funnel & Sieve directly into a 0.5 L iSi unit. Screw on one iSi Professional Charger and shake vigorously. Keep the iSi device warm at max. 70 °C in the bain-marie or in a water bath. Shake vigorously before serving.
5.
For a 1 L iSi unit, double the ingredients. Screw on 2 iSi Professional Charger one after the other and shake vigorously after each capsule. If using a 0.25 L iSi device, please halve the ingredients and user one iSi Professional Charger.
