Ingredients

apple juice
50 g
powdered sugar
190 ml

Steps to prepare
1.
For the apple cinnamon foam, soak gelatine in cold water. Mix applesauce, mascarpone, powdered sugar and cinnamon with a hand blender until homogeneous.

Slightly heat the apple juice and dissolve the gelatine in it, then stir into the apple mixture. Finally, stir in the cold whipped cream.

Pour the entire mixture through the iSi funnel and sieve directly into a 0.5 L iSi Whip, screw on one iSi Professional Charger shake 8 times and refrigerate for 2 hours.
Buttermilk Schmarrn
Ingredients
180 g
flour
8 g
baking powder
3 pcs.
eggs (150g pasteurised)
10 g
QimiQ natural
10 g
powdered sugar
220 ml
buttermilk
Steps to prepare
1.
For the Buttermilk Schmarrn, mix the powdered sugar, flour, baking powder, vanilla sugar, buttermilk and eggs into a smooth dough.
2.
Strain the mixture through the iSi funnel & sieve directly into a 0.5 L iSi Whip. Screw on 1 iSi Professional Charger and shake 18 times.
3.
Then heat butter and oil in a pan, foam the Schmarrn mixture directly into the pan and fry until golden brown on both sides, about 4-6 minutes each. Break up the Schmarrn in the pan. Add the granulated sugar, let it caramelize until light and roll the Schmarrn in it.

Arrange the Schmarrn on plates, sprinkle with powdered sugar and serve with the apple-cinnamon foam.
