Ingredients

Pasteurised egg yolk
40 ml
white balsamic vinegar
1 pinch
pepper
1 pinch
salt
15 g
Dijon mustard
200 ml
oil
15 g
paprika powder
25 g
tomato paste
1 tsp
Sriracha Sauce
200 ml
chicken stock
1 pinch
Chilli powder
Steps to prepare
1.
Puree all ingredients finely using a hand blender or mixer.

Then, pour the entire mixture through the iSi Funnel & Sieve into a 0.5 L iSi Gourmet Whip. Screw on the iSi Professional Charger and shake vigorously 16-18 times.

After that, chill in the refrigerator for at least 30 minutes and shake vigorously again before use.
