Steps to prepare

For the orange salad, cut off the peel of the oranges and fillet the orange segments. Collect the juice in a bowl. Bring the juice, cardamom, lemon and vanilla pod to the boil and set aside.

For the chocolate cake, preheat the oven to 190°C. Grease the cocotte molds with butter and sprinkle with granulated sugar. Melt the butter and chocolate until liquid, mix well with the powdered sugar, eggs (at room temperature), yolks (at room temperature), salt and vanilla sugar and pour through the iSi funnel & sieve into the bottle, screw on 1 iSi Professional Charger and shake vigorously 10 times.

Mix the flour with gingerbread spice in a bowl and add the egg-sugar mixture directly from the machine and mix gently. Immediately pour the dough into the molds and bake in the oven for about 15 minutes. Sugar the cakes and serve with the orange salad.
