Steps to prepare
1.
Whisk together the QimiQ Cream Base, liquid components and the QiQ Butter Sauce Base. Then bring to the boil briefly (85°C), add the butter and set aside.
2.
Then blend the mixture well with a hand blender or stand mixer and pour directly through iSi Funnel & Strainer into a 0.5 L iSi Whip. 1 Screw on the iSi Professional Charger and shake vigorously 20 times.
3.
With an iSi Gourmet Whip and heat protector, the sauce can be kept warm at 69°C in a water bath.
