Preparation Kaiserschmarrn
Combi steamer: Spread the frozen Kaiserschmarrn evenly on greased GN trays (40 mm). Use two 1/1 trays per 2.5 kg bag. Prepare in a preheated oven at 150°C with 50% combi steam for 10-12 minutes.
Pan: Cook the frozen Kaiserschmarrn over a medium heat with clarified butter for approx. 10 minutes, turning several times.
Microwave: Drizzle 300 g of the frozen Kaiserschmarrn with melted butter and regenerate in a covered microwave dish for approx. 3 minutes at 600 watts, then leave to stand in the covered dish for approx. 1 minute. Heat the product to at least 75 °C before serving.
Preparation of vanilla foam
Pour the required amount of cold milk into a tall container. Add the appropriate amount of sauce powder and stir vigorously with a whisk for about 1 minute.
Then pour into the 0.5 L iSi Gourmet Whip, e.g. using a funnel, close and cap. Then shake 20 times.
Serving
Place the Kaiserschmarrn (seven pieces), slightly overlapping, like a winding road. Using the iSi Gourmet Whip, pipe the vanilla foam into five dots of different sizes.
Garnish with four blackberries and raspberries and two sprigs of mint. Finally, sprinkle with a little powdered sugar.
