Steps to prepare

Pour the tuna and then together with the canola oil, sesame oil, ginger, sake, soy sauce, orange peel and salt into a 0.5 L iSi Gourmet Whip.

Mount the iSi Rapid Infusion Accessories on the iSi Gourmet Whip according to the instructions. Screw on an iSi Professional Charger and allow to rest for at least 30 minutes. Then quickly deaerate the iSi Gourmet Whip by operating the lever and pour the contents into a bowl.

Dice the mango and mix into the tartar. Finally, refine with coriander.
