Ingredients

venison stock

red wine

Salt and pepper from the mill

butter
100 ml
orange juice

cranberry juice
Steps to prepare
1.
Bring the stock, orange juice, cranberry juice, red wine, and butter to a boil and simmer for 4 minutes. Mix and season to taste with spices and smokey rub.

Then strain directly through the iSi Funnel & Sieve into a 0.5 l iSi Whip and screw on a long iSi Injectior tip. Screw on an iSi Professional Charger, shake, and inject directly into the meat.

Injection with iSi technology saves you long waiting times. The meat can be prepared directly as usual and remains particularly juicy – even during long cooking times! The marinade goes very well with deer, wild boar, or other large game!
