Warm Sweet Potato Espuma
Ingredients
200 g
sweet potato(es), peeled
250 ml
milk
1 pinch
salt
5 g
Magic Texturizer
1 pinch
pepper
70 g
butter
Steps to prepare
1.
Boil the sweet potatoes in lightly salted water until soft, remove the water and reheat with butter and milk.
2.
Blend finely in a hand blender or stand mixer with the Magic Texturizer and season to taste.
3.
Then pour the entire mixture through the iSi Funnel & Sieve into a 0,5 L iSi Gourmet Whip.
4.
Screw on an iSi Professional Charger and shake the bottle vigorously 18 to 20 times. Optionally, keep the bottle warm in a water bath at 69 degrees Celsius.
