Ingredients

lemon juice

stock

egg yolks
10 ml
vinegar

Cheddar
75 g
butter
Steps to cook
1.
Bring the cheddar cheese, butter, stock, vinegar, lemon juice and spices to the boil and then mix in the yolks and egg.
2.
Pour directly through iSi Funnel & Strainer into an iSi Whip. Screw on an iSi Professional Charger and shake about 12 times.
3.
In the Gourmet Whip, the sauce can be kept warm in a water bath at 70°C for three to four hours.
