Ingredients
25 g
Spinach / Wild Garlic
125 ml
vegan cream (31%)
220 ml
vegetable stock
100 g
ripe avocado(s)
1 g
agar-agar
25 g
chives
25 g
parsley
Steps to prepare
1.
Stir the Agar-Agar into the cold vegetable broth and bring to a boil. Puree all ingredients finely with a hand blender or in a mixer.
2.
Pour the entire mixture through the iSi Funnel & Sieve into a 0.5 L iSi Whip. Screw on an iSi Professional Charger and shake vigorously 14 times.
3.
Place in the refrigerator for several hours and shake vigorously again before use.
