Steps to prepare
1.
Strawberry mousse
Blend strawberries with strawberry juice and honey, stir in 100 ml cream and strain directly through an iSi sieve and funnel into a 0.25 liter iSi unit. Screw on an iSi cream capsule and shake 6-10 times.

Vanilla Espuma
Blend the remaining cream, custard, milk and vanilla syrup until smooth and strain directly through an iSi Strainer and Funnel into a 0.25 liter iSi unit. Screw on an iSi Professional Charger and shake 6-10 times.
3.
iSi cuts
Boil the apricot jam in a 4:1 ratio with water. To serve, start with the puff pastry and successively layer the boiled apricot jam, dark sponge, apricot jam, light sponge and apricot jam again. Finally, garnish with the strawberry mousse and vanilla espuma.
