Steps to prepare

Whisk together the QimiQ Cream Base, liquid components and the QiQ Butter Sauce Base. Then bring to the boil briefly (85°C), add the butter and set aside.

Then blend the mixture well with a hand blender or stand mixer and pour directly through iSi Funnel & Sieve into a 0.5 L iSi Gourmet Whip. Screw on 1 iSi Professional Charger and shake vigorously 20 times.
3.
With an iSi Gourmet Whip and heat protection, the sauce can be kept warm at 69°C in a water bath.
