Steps to prepare
1.
Warm the butter, vinegar, lemon juice, and vegetable broth in a Thermomix for at least 5 minutes at 70°C (158°F).

Set the Thermomix to level 3 and directly add the egg yolk, whole egg, and Magic Texturizer. Then, run the Thermomix for an additional minute on high speed and add the wild garlic paste.

Strain the mixture through the iSi funnel & sieve directly into a 0.5 L iSi Whip. Attach an iSi Professional Charger and shake vigorously 14-16 times. Warm the sauce in the iSi Gourmet Whip with heat protection in a water bath at 69°C (156.2°F) for at least 40 minutes.
