Yeast Cream
Ingredients

Cream
50 g
Agave syrup
1 pinch
salt
80 ml
milk
10 ml
rum
10 g
yeast
Steps to prepare

Bring milk and yeast to the boil and remove from heat. Add cream, rum, agave syrup and a pinch of salt and pour through iSi funnel & sieve into a 0.5 litre iSi bottle, screw on one iSi Professional Charger and shake vigorously. Chill in the fridge for 1-2 hours.
Red Wine Plums

plums, frozen

red wine

butter
50 g
maple syrup

cinnamon sticks
1 large pinch
orange zest
Steps to prepare
1.
Caramelise the maple syrup in a pan and add 30g of butter. Quarter the plums and add. Add the red wine, zest of half an orange, cinnamon and a pinch of salt and simmer over a medium heat for 5 minutes.

Ingredients

braided yeast bun

Steps to prepare
1.
Cut the braided yeast bun into small cubes, heat the oil in a frying pan, add the yeast cubes and toast over a medium heat until golden. Then add the remaining butter, 1/2 tsp cinnamon and a little orange zest and toss until it becomes fluffy. Then drain the croutons on a kitchen towel and add the spices on top.
